Yellow Curry


Yellow curry is more commonly known in the Philippines as simply chicken curry. Chicken simmered in coconut milk with curry powder is a staple meal among Filipinos.

  • 1 whole Chicken cut

  • 2 cup Coconut Milk

  • 2 tablespoons Curry Powder

  • 2 medium Potatoes quartered

  • 1 small Bell Pepper cut into strips

  • 2 small Carrot chopped

Pantry Staples
  • 0 Salt and Pepper to taste

  • 3 cloves diced Garlic

  • 1 small diced Onion

  • 1 tablespoon Fish Sauce

  • 1 cup Water

How to Cook

1. In a large pot, heat oil. Add potatoes and cook for 3-4 minutes. Add carrots and cook for another 2 minutes. Transfer to a bowl to and set aside, allowing to cool.
2. Cook onions and garlic in the same pan until onions are translucent. Add chicken and cook for 7-8 minutes. Add the water, vegetables, and bell pepper, covering the pot and allowing it to boil before lowering the heat to simmer.
3. Mix coconut milk and curry powder. Pour on the pan and season with fish sauce. Simmer for 20-30mins or until chicken is cooked.
