Menudo is traditionally made by stewing pork and calf liver in tomato sauce with vegetables.

  • 1 kilogram Pork slice thinly

  • 100 grams Liver sliced thinly

  • 1 cup Potatoes diced

  • 1 cup Carrot cubed

  • 4 pieces Calamansi Juice

  • 2 cup Tomato Sauce

  • 1 teaspoon Brown Sugar

  • 1 Bay Leaf

  • 0 Raisins (optional)

  • 1 large Red Pepper sliced thinly

Pantry Staples
  • 0 Salt and Pepper to taste

  • 0.5 cup Soy Sauce

  • 3 cloves chopped Garlic

  • 1 medium chopped Onion

  • 1 cups Water

How to Cook

1. Marinate pork in soy sauce and calamansi juice for 1 hour. Remove pork from marinade and set aside.
2. Heat oil and fry potatoes until soft. Set aside.
3. Soak raisins in water for 10 minutes. Drain and set aside.
3. In the same pan, sauté onion and garlic, until onions appear translucent. Add pork and sprinkle with some salt and pepper, and cook for 5 - 8 minutes. Add liver and cook for 5 minutes.
4. Add tomato sauce, water, bay leaf, and brown sugar. Bring to boil then reduce heat to simmer for 20-25 minutes (40-50 minutes if using beef meat and liver) or until pork meat and liver is cooked.
