Chicken Inasal


Chicken inasal is grilled meat that is marinated in sinamak or coconut vinegar with chili, garlic, shallots and onion.

  • 1 whole Chicken portioned into 6 to 8 pieces

  • 0.33333 cup Coconut Vinegar

  • 10 pieces Calamansi Extract

  • 3 stalks Lemon Grass (tanglad) julienne

Pantry Staples
  • 0 Salt and Pepper

  • 1 piece crushed and diced Head Garlic

  • 0.5 cup Margarine

  • 0.25 cup Annatto Seed (atsuete)

  • 0 Salt and Pepper

How to Cook

1. In a large zip lock bag, mix all ingredients for marinade.
2. Add the chicken pieces inside the zip lock bag and rub the pieces with marinade. Rest for 1 hour. Do not leave to marinade overnight.
3. Heat pan in low fire, put margarine and annatto seeds in the pan and cook for 2 minutes.
4. Skewer the marinated chicken. Slit the chicken meat near the bones to help it cook.
5. Prepare the grill. Grill the chicken pieces for 10-15 minutes each sides, basting it every 5 minutes.
