Grilled Chicken Caesar Salad
Grilled chicken Caesar salad is both healthy and filling. It can also be made ahead of time and kept in the fridge for 2 days.
0 pieces Ciabatta Loaf cut into bite size pieces
3 tablespoons Olive Oil
2 pieces Boneless Chicken Breast
1 large Romaine Lettuce leaves separated and washed
2 pieces Anchovy
5 tablespoons Mayonnaise
1 tablespoons White Wine Vinegar
0.5 cup Parmesan Bloc
1 clove Garlic
How to Cook
1. Rub chicken breast with olive oil, salt and pepper. Grill for 3 minutes or until cooked. Cut into bite size pieces.
2. Preheat oven for 350 degree Fahrenheit or oven toaster. Toss ciabatta bread in olive oil. Bake for 10 minutes or until croutons are crispy and golden brown.
3. In a medium size bowl, grate garlic. Add anchovy, mayonnaise and white wine vinegar. Grate parmesan to your liking and mix everything until well blended.
4. Cut lettuce leaves in half, toss in Caesar sauce. Add chicken bites and toasted ciabatta on top. Drizzle more sauce and grate parmesan on top.
